Boricha/보리차 (roasted barley tea)

Good source of: antioxidants

Open the fridge in a typical Korean home and you will likely find a pitcher of boricha, or barley tea. Caffeine-free and low in calories, barley tea has antioxidant properties that prevent wrinkles, and anti-bacterial properties that prevent tooth decay. Barley tea can also be served warm, and is a great year-round staple that is easy to incorporate into your diet. Barley tea can have a number of health benefits that are both short and long term. It can lower one’s risk of catching a cold, for example, while its antioxidant and circulatory benefits can help reduce the risk of infection, inflammation, heart disease and obesity.

 

1. It cleanses your blood.

A substance, pyrazine, in barley tea is shown to prevent blood coagulation and improve circulation, which lowers the risk of heart/coronary diseases.

 

2. Barley tea is rich in antioxidants & minerals.

Barley is rich in antioxidants, which protect & heal from cell and DNA damages. Good for anti-aging, healthy skin, and improve overall immune system. Barley tea is also rich in minerals, replenish them on a hot sweaty summer day. It helps neutralize acidic condition of your blood and other bodily fluid to maintain internal homeostasis.

 

3. It has a natural cooling effect.

According to Eastern medicine, barley is more “yin” food, which naturally cools down your core body temperature. It’s true from my own experience that nothing is so refreshing than a glass of chilled barley tea on a hot & humid summer day!

 

4. Barley tea breaks down fat and cleanses the liver.

Barley is also known to help break down excess fat in the body. Along with its blood cleansing effect and antioxidants, barley is listed as one of the most “liver-healthy” food in Japan, and this tea is excellent after you had fatty BBQ or fried chicken.

 

Makes 2 quarts of tea.

Ingredients:

2 quarts spring water

1/2 cup roasted barley OR 1/4 cup roasted barley

and 1/4 cup roasted corn

Equipment:

>large pot for boiling water

>fine mesh strainer or cheesecloth

>large pitcher

 

Directions:

1.) In a strainer, rinse the barley (and corn, if using) under cold water. Place the grains in a large pot and add 2 quarts of spring water.

2.) Place the water-barley mixture on the stove and let it come to a rolling boil.

3.) Simmer the tea on medium heat for 20 minutes. After the 20 minutes are up, you will notice that the grains have settled to the bottom of the pot.

4.) Carefully pour the tea through a fine mesh sieve or piece of cheesecloth (in a sieve) into a large pitcher.

5.) Let the tea come to room temperature, then cover and place in fridge to cool completely. I like to serve the tea chilled, without ice, but it can also be served warm or hot.
